Spring along the Gulf Coast signals a shift in both weather and the waters, bringing some of the freshest, most flavorful seafood of the year to the table. From March through May, fishermen are hauling in peak-season catches known for their clean taste, firm texture, and versatility in the kitchen.
At Azura Coastal Kitchen, our spring menu celebrates what’s best right now, pairing seasonal seafood with bright, coastal flavors inspired by the Gulf and beyond.
What’s in Season This Spring
Grouper (Peak in May)
A Gulf favorite, grouper is prized for its firm, flaky texture and mild, slightly sweet flavor. At Azura, our Grouper Bites are flash-fried black grouper cheek, with lemon crème. Crispy on the outside, tender on the inside.
Shrimp (Great Year-Round, Exceptional in Spring)
While Gulf shrimp are available year-round, spring offers consistently excellent quality. At Azura, our Shrimp Al Ajillo is sautèed with garlic, parsley, and cayenne paprika oil. A timeless coastal classic that lets the freshness of the shrimp speak for itself.
Salmon (April-June)
Spring salmon offers rich flavor balanced by a clean finish, making it perfect for lighter, seasonal pairings. At Azura, our Grilled Salmon is served with a spinach-and-feta puff pastry, asparagus, and heirloom beurre blanc. A refined spring dish that’s comforting yet fresh.
Mahi-Mahi (April-May)
Lean, flavorful, and versatile, mahi-mahi is a springtime favorite for its slightly sweet taste and firm texture, which hold up beautifully to grilling or blackening. At Azura, our Mahi Sandwich can be blackened, fried, or grilled, served with house remoulade, lettuce, tomato, onion, and a brioche bun. Coastal comfort at its best.
